Easy and Fast Recipe :Tuna filled Tortillas

I have been thinking the last days about the blog...now that more people are following it (thank you all!!!) i want to try some things and take it a step further! Of course i will continue writing about beauty related things but i want to add also some everyday life stuff, those that i enjoy and i want to share with you! The blog's name is "Just a Bit of All'' so i guess it is about time to become more versatile! Would love any recommendations and ideas...your feedback is always important and i am happy to listen to what you have to say!

So to begin the changes of the blog i am starting today a new series the "Easy and Fast Recipe''...I have to make my own food to take everyday at work (since there is no cafeteria or food provided where i work) and i try to keep it healthy...Of course i love cooking and baking and sometimes i spend hours in the kitchen, but when i go home on a weekday late and tired all i want is to put together something easy for the next day's lunch, that is also not so complicate to carry! One of those recipes is my own version of Tuna filled Tortillas that i have today for you!

You will need:

4-6 whole weat flour tortillas (i had the small size)
1 tomato
1/2 cucumber
6 green olives
1 can tuna
2 spoons mayonnaise (i used low fat)
fresh parsley
oregano
salt
2-3 drops lemon juice

Side dish :

1/2 avocado

Chop 1/2 cucumber, 1 tomato, parsley and 6 olives in small pieces and mix in a bowl together with 1 can of tuna (i used the one in salt water).

Add 2 spoons of low fat mayonnaise and 2-3 drops lemon juice and mix well.  Season with salt and oregano.

Place one flour tortilla in a plate, add two spoons of the tuna/vegetable/mayonnaise mix in one side and roll carefully until a small tube is formed. Continue with all the tortillas and leave for at least 30 minutes in the fridge.

Before serving cut the tortillas in 3 pieces and add as a side slices from half avocado. Don't forget to eat any left over of the filling with a spoon!!! Enjoy!

I hope you like this easy and fast recipe. You can make it the day before, wrap it well in saran wrap  (or any other plastic wrapping material you use) and leave them overnight in the fridge! I usually do it like that so the next day i have a delicious and healthy lunch with me!

Let me know if you try it and what did you think! Hope you will enjoy my East and Fast Recipe series and will be waiting your feedback on the changes i plan for the blog! Stay tunned!
